Khoya Besan ladoo is a very easy sweet to make and is popular throughout India, especially at festivals and celebrations. It tastes so yummy and delicious.Hope you will give this a try this holi and let me know how it turns out for you..

Ingredients :-


   25 - Kaju / Cashew nuts coarsely chopped or crushed
   2 cups -  Khoya/mawa grated
   2 cups - Gram flour (besan)
   1 cup - Ghee (melted)
   2 cups - Powdered sugar
   1 teaspoon - Green cardamom powder
   Cashews to garnish



Method:- 

1) Grind Sugar into a fine powder and set aside.

2) Heat ghee in a heavy bottomed pan or kadai. Roast besan for 5 mins on low flame . Keep stirring till the flour becomes golden brown and ghee separates.

3) Add grated khoya or mawa and stir well for 3 mins till the khoya blends well with the gram flour.

4) Add cardamom powder and crushed cashewnuts mix well.

5) Switch off the stove.

6) Transfer the mixture into a bowl. Let it cool a little and then add the powdered sugar and mix well.

7) Using lightly greased hands, Shape into small rounds or ur desired shapes when still little bit warm.

8) Garnish with Cashews or Kismiss

9) Let the Ladoos cool completely and store in an airtight container.

10) These laddoos should be consumed fast since they have khoya in them and will not keep for too long.

11) Better to store them in the refrigerator.

Note : If it's difficult to make Ladoos, you can add some melted ghee, if needed.

Groundnut / Peanut Ladoo is made with groundnuts and jaggery as main ingredients.It is very easy to make, tastes delicious and healthy too.Groundnuts are high in protein and jaggery is rich in Iron  so these ladoos are energy booster ,nourishing and healthy.No ghee is needed to prepare these ladoos.Kids will love it as it is soft .My daughter loves this peanut ladoo very much.This can be packed for kids snackbox too.

Ingredients :-

Raw Peanuts / Groundnuts/ Shengdana - 1 cup
Powdered Jaggery - 3/4 cup adjust according to taste
Cardamom powder - a generous pinch

Method:-


1) Dry roast the groundnuts till nicely browned and the outer skin start to come out.
2) When it cool down little bit rub the groundnuts  with your hands and blow away the skin .But I don't prefer to remove the skin of groundnuts.
3) Grate or powder the jaggery and keep it aside.


4) Now put the groundnuts in a mixer and give a quick grind as fine as possible.It will be slightly coarse only.


5) Then add the  powdered jaggery to groundnuts powder. All together grind this mixture in a mixie till they are well combined.


6) When you grind this mixture in a mixie ,oil from groundnuts oozes out and  helps in binding a ladoo .
7) Transfer this mixture  to a bowl, add cardamom powder .Mix well and break the lumps formed.


8) Shape them into small balls.No need to grease at all, as the oil in groundnuts is just enough to hold together.


9) Groundnut Ladoos are ready .Store in an airtight container.

Tips:-

Sweetness is just perfect but if you want more then add 1 cup of jaggery.
If it hardens in the end for the last few balls then heat up the mixture for a minute, jaggery will melt then you can make balls or again grind for a minute in a mixie then you can make ladoos.


Mostly everyone loves Laddoo. It can be  prepared for any  ceremonies – be it weddings, engagements, house warmings,  or for god/goddess specific poojas. It can be prepared  for any festivals like Diwali, Navratri and Ganesh Chathurti etc.It get’s-done quickly without any complications involved in making them.This Diwali I prepared these Ladoos.They taste very delicious.

 Ingredients:-

Chiroti rava / Sooji (Thin semolina) – 1 cup

Besan atta – 1 cup

Pure ghee –  1/2 cup

Sugar powder –  1 1/2 cup

Cardamom – 1 tsp

Some Kishmish (raisins), some Cashews




Method:-


1) In a bowl, sift the chickpea flour / Besan .Sifting avoids lumps.

2) First warm the ghee in wide bottomed pan on low heat. If it is solidified, then it will melt. Don’t overheat. Warming it is enough.Take it in a bowl and keep it aside.

3) Fry cashew nuts and raisins in some ghee and keep aside.

4) In a same wide bottomed pan roast the rava on medium flame till you get a pleasant aroma and set aside. Make sure it is not burnt .

5) In a same pan add Besan Atta and 1/2 cup of melted ghee and stir continuously. Occasionally add remaining ghee into it. Keep stirring till the flour becomes golden brown and ghee separates and nice aroma comes out of it. Whole house will be spread with that nice aroma.. Add the roasted rava to it and heat the mixture for about 1 minute while constantly stirring.

6) Remove from fire ,set aside to cool down a little.

7) After cooling ,add powdered sugar, cardamom powder, and fried cashew nuts and raisins. Mix well.If you want to garnish then keep some cashews and raisins aside. Using lightly greased hands, Shape into small rounds or ur desired shapes when still little bit warm.You can garnish with cashews or raisins.

8) Store Rava Besan laddus in an airtight container.

Note :
If it's difficult to make ladoos, you can add some melted ghee, if needed.


Rave ladoo is one of my favorite sweets from my childhood.Making Rava ladoo in the microwave is really easy and quick.These ladoos tastes delicious and saves our lot of time and efforts.

Makes: 10 big ladoos

Ingredients:-

2 cups Fine Semolina/Rava/Sooji
2 cups Powdered Sugar
3/4 cup Ghee
1 tsp Powdered Cardamom
10 Cashews  (Optional)

Method:-

1) Place rava in a microwave safe bowl and add melted ghee to it.. Mix well and place in microwave on high for 4 mins.(Time may vary depending on your Microwave). Keep stiring in between after every one minute..
2) When done, remove and allow it to cool in a wide plate (30 mins).
3) Once cool, add powdered sugar cardamom powder and nuts (if using) and mix well to remove lumps. I did'nt add nuts to rava ladoos.
4) Make small round balls with hand.
5) If they break easily or hard to make nice shaped ladoos then add 2-3 tbsp hot melted ghee and then make ladoos.
6) Store in air tight container and enjoy for next few days :)

Ingredients:-

For Boondi

A fine holed shallow strainer spoon
1/2 tsp Cardamom powder
3 cups Ghee for frying
2 1/2 cups Gram flour (not superfine variety)
500 ml Milk
1 tbsp Raisins


For Syrup

* 2 1/2 cups Sugar
* 3 1/2 cups Water
* 2 tbsp. Milk
* few drops orange colour



Method:-

For Syrup

* Put sugar and water in a vessel and boil.
* When sugar dissolves, add milk.
* Boil for 5 minutes till scum forms on top.
* Strain and return to fire.
* Add colour and boil till sticky but no thread has formed.
* Add cardamom powder and mix. Keep aside.

For Boondi:

* Mix Gram flour and milk to a smooth batter.
* Mix all the ingredients mentioned under stuffing except milk.
* Heat ghee in a heavy frying pan.
* Hold strainer on top with one hand.
* With the other pour some batter all over the holes.
* Tap gently till all batter has fallen into hot ghee.
* Stir with another strainer and remove when light golden.
* Keep aside. Repeat for remaining batter.

Final Steps:
* Immerse boondi in syrup.Mix in Raisins.
* Drain any excess syrup.
* Spread in a large plate. Sprinkle few tsp. hot water over it.
* Cover and keep for 5 minutes.
* Shape in laddoos with moist palms.
* Cool and keep open to dry, before storing in containers.

In India, laddoos come in many varieties.Peanut ladoo is a tasty snack which is prepared under 10 minutes. When we were kids, it would be finished in a single day if my mom prepared it. Also can be used on a day one is fasting.

Ingredients:

Peanut (Ground nut) - 1 cup
Powdered Sugar - 1/2 cup
Ghee enough to shape the laddoos

Method:

1. Dry-roast peanuts in a large pan until they turn golden brown. The raw smell shouldn't be there. Otherwise it doesn't taste good .

2. Skin them. (For beginners: An easy way to skin: Take peanuts in a large plate and gently rub the nuts with both hands. The skins would come away very easily. Now blow away the skins into the sink.)

3. In a blender, grind the nuts for just 5 seconds.

4. Take in a bowl mix the powdered sugar.

5. Add enough ghee to make round laddoos.

6. Mix well and make small-sized firm balls.

Its quick and easy to make and serve.


Ingredients:-
2 cups wheat flour
1/2 tsp cardamom powder
2 cups sugar
1/2 cup Milk
2 tbsp ghee
Fried Cashewnuts and raisins




Method:-

Heat the ghee and add the wheat flour to it. Cook on low flame with frequent stirring till the raw smell goes off.

Add sugar, cardamom powder,Cashewnuts, raisins and milk to it. The quantity of milk must be just enough to get a big lump of the flour. Mix well till sugar melts and remove from stove.

Cool for 3 to 4 minutes and make balls of it.Make balls out of this mixture when it is still warm. Pour a little amount of milk in a bowl and dip the hand in this before making the ladoos so that the hand won’t burn.



Garnish the ladoos with the cashews and raisins and leave them on a plate to dry.

Transfer the ladoos to an airtight container when they become dry .

Rava Ladoo is a delectable Indian dessert made with semolina.Few days back my daughter came to me and said that she wanted to eat ladoos which Ammama had brought.Last time when my mother visited us she brought Rava Ladoos.Suddenly my daughter remembered of that she asked me for that.I could not say no to my liitle ones wish and I started searching for the recipe. Finally I found the recipe at Srivallis Blog same as mom used to make.Thanks Srivalli for sharing such a nice recipe.My Amma makes yummy ladoos.She is famous for her yummy Ladoos and Burfis.I have always only helped Amma in frying or making the balls. She used to ensure each ladoo has atleast some nuts in them and cashewnut above each ladoo...Finally Ladoos came well and they were tasty and first of all my daughter liked it very much and she asked me to prepare it again for her when it finishes off.


Ingredients:

Rava / Semolina - 1 cup
Sugar - 1 cup
Ghee - 25 gms
Milk - 25 ml
cardamom powder - a pinch
Cashew nuts - 10 whole nuts
Raisins - 10 nos
Grated fresh coconut - 25 gms



Makes - 10 Ladoos

Method:-

1) Heat 2 tsp of ghee in a Pan . Once its hot, sim and roast cashew nuts and raisins. Once the raisins balloon up, remove. Then roast the grated coconut. Remove once done.

2) Add the remaining ghee and roast the Rava till its well roasted and aroma starts coming out.

3) In a bowl, take all the roasted Rava, Nuts, Coconut and add the Cardamom powder. Then add the sugar. Mix well.

4) Then slowly add the warm milk into the bowl. Check if you are able to gather as balls. When you find that milk added is enough to get you ladoos, transfer it back to the pan and cook in sim for 2 mins. Mix well and then cover it and let it rest for 2 mins.

5) Make balls out of this mixture when it is still warm. Pour a little amount of milk in a bowl and dip the hand in this before making the ladoos so that the hand won’t burn.

6) Since we add milk, its best to consume within 5 days of making them. If you store them in fridge, you can have them for a week.

Tip :-Let the Ladoos cool completely before storing them in an airtight container or ziplock bags.
