Corn Pulav tastes delicious and easy to prepare requiring fewer vegetables. You can prepare Corn Pulav for lunch or as a breakfast or for dinner.Its healthy too!
1 cup Long grain rice / Basmati rice
1/2 cup corn kernels
1/2 tsp cumin seeds
1 medium onion chopped
1 small Tomato (Optional)
Salt as per taste
1 tsp ginger- garlic paste
2 Green chillies (slit lengthwise)
1/2 tsp garam masala powder
1 tsp red chilli powder
2 tsp ghee
A small piece of cinnamon
1 bay leaf
Cashews -a handful
1) Wash the rice and drain it and keep it aside.
2) Heat ghee in pressure cooker and add cumin seeds. When they splutter add cloves, cinnamon, bay leaf and cardamoms,green chillies,cashews. Fry for a minute and add the chopped onions. When they turn transparant add ginger garlic paste and stir for a while. Then add chopped tomatoes and fry for a minute.Then add turmeric,garam masala ,red chilli powder and salt.
3) Finally add the washed rice and stir for a while.Add corn kernels and 2 cups of water to it and close the lid and cook till 2 whistles or till done..
4) Garnish with chopped coriander.
Mix well and serve hot with chips and raita.
