This Aloo cheese sandwich makes a hearty breakfast.Its very easy to make and very yummy to taste. Kids like it very very much. You can make it for Kid's Lunch box ,for evening snacks or for picnics also.

Ingredients :-

    6 Slices of brown bread or white bread or
    3 medium size potatoes (Boiled )
    1 tsp chaat masala
    1/2 tsp red chilli powder
    1/2 tsp cumin powder/jeera powder
    1/2 tsp coriander powder /Dhania powder
    1/4 cup chopped coriander leaves
    3 cheese slices or grated cheese or   cheese spread
    Butter / Ghee to brush
    Salt to taste

Method:-

1) First boil potatoes ,peel off and mash or grate them properly.
2) Add chaat masala, red chili powder, cumin powder,coriander powder,salt and chopped coriander to the mashed potatoes.


3) On slices of bread, apply butter on one side.


4) Now on other side apply cheese spread on both bread slices or top up with some grated cheese or place a cheese slice on the bread.


5) Apply the mashed potato mixture on top of the cheese.




6) Cover with another buttered bread slice.
7) Toast or grill the sandwich till browned and crisp.
8) Heat a griddle.Now grease the griddle with little butter and place sandwich on it.


9) Cook on medium low heat .Flip the sandwich and cook till both sides turn brown and crisp.

10) You can also make the sandwich in the sandwich toaster or in the grill.




11) Yummy Sandwich are ready to serve.Cut the sandwich diagonally.


12) Serve Aloo toast cheese sandwich with green chutney or tomato ketchup.



These Blackberry mini muffins are Perfect for snacks , Lunch boxes and Picnics.These muffins came out very delicious ,light ,Extremely moist and fluffy bursting with fresh blackberries.These are hit in our family and vanished with the wink of an eye...


Ingredients:-

325 grams - All-purpose flour

150 grams - Granulated white sugar

2 tsps - baking powder

1/2 tsp - baking soda

1/4 tsp - salt

1 large egg, lightly beaten

180 ml- buttermilk

160 ml- Canola oil

1 tsp - pure vanilla extract

1 1/2 cups fresh or frozen blackberries

 Blackberry Cake

Method:-

Preheat oven to 375 degrees F (190 degrees C). Position rack in center of oven. Butter or spray the muffin pan with a non stick cooking spray or line it with paper liners. Set aside.

In a large bowl whisk together the lightly beaten egg, buttermilk, oil, and vanilla extract.

In another bowl combine the sieved all purpose flour, sugar, baking powder, baking soda, salt.With a rubber spatula fold the wet ingredients into the dry ingredients and stir only until the ingredients are combined. Gently fold in the berries. Do not over mix the batter or tough muffins will result.

Fill each muffin cup almost full of batter, using spoon. Place in the oven and bake until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes.

Transfer to a wire rack and let cool for about 5 minutes before removing from pan.

The recipe said that it makes about 12 regular sized muffins or 6 jumbo muffins 0r 36 mini  but for me more batter was there so I put that batter in a cake pan and baked a cake.Cake might take a little longer time, 30 minutes  at 350 F or so till the knife comes out clean.

Note:-

1) If using frozen berries you may have to bake the muffins a little longer than the stated time. Also, if making jumbo sized muffins, again, you may have to bake the muffins a little longer.

2) If you use frozen berries, instead of fresh, just be sure not to defrost the berries first as this will cause them to soften and bleed into the batter.



This Lemon rava pulihora is very easy to make and tastes delicious.Even kids love this.This can be eaten as breakfast or lunch or dinner.It is a great picnic meal too.

Ingredients:-

Lemons - 2  (Large size )
Rice rava ( Biyyapu Rava) - 1 glass / 250 ml
Water – 2 glasses
Channa dal (bengal gram)– 2 tbsp
Cumin seeds – ½ tsp
Mustard seeds – ½ tsp
Groundnuts - 2 tbsp
Green chillies – 10
Red chillies – 4
Curry leaves - 10
Oil – 2 tbsp
Hing (asafoetida) -a pinch
Salt to taste



Method:-

1) Usually we get Rice Rava (Biyyapu Rava) in Indian stores. Or else, wash the rice and dry it on a cloth. Grind to coarse mixture.
2) Soak the chana dal for at least 20 minutes.
3) Heat a pan add 1 tsp oil, Add 2 glasses of water (500 mi) ,salt 1/2 tsp ,1/4 tsp of turmeric.
4) When water is boiling add channa dal .
5) Stir continuously for a minute and put a lid. When it cooks completely then add rice rava. Stir it well and put a lid,Reduce flame and cook till soft. It just takes 5 mins to get cooked . . When it cooks completely switch off stove and open lid after 10 mins.
6) Cool out the cooked rice rava on a wide or big plate.
7) Mean while cut lemon and squeeze their juice in a bowl along with 1 1/2tsp of salt and keep it aside.
8) Heat oil in a pan fry ground nuts /peanuts till nice golden color remove and leave a side.Now add mustard seeds.After they splutter add cumin seeds,red chillies,slit green chillies ,curry leaves, asafoetida and 1/4 tsp turmeric powder and fry for a minute.Then switch off the stove.
9) Add the seasoning and lemon juice to cooked rice rava and mix well without any lumps and lemon juice coats evenly.Mix roasted groundnuts.Adjust the salt and lemon juice if required.
10) Serve it after an hour or 2 hours.
Tasty and sour nimmakaya rava pulihora is ready to serve.
Serve with appadam or chips.

Tip:-

Pulihora tastes best after sitting for a couple of hours from the time of preparation.

They go great with some cool cocktails too.

Ingredients:-

* 2 cups Whole, unsalted almonds
* 1/2 tbsp cumin powder
* 1/2 tbsp coriander powder
* 1 tbsp Chaat Masala (optional)
* 1 tbsp salt
* 2 tbsp Butter / Olive oil


Method:-

* Pre heat the oven to 350F/180C.
* Mix all the ingredients in a bowl , add almonds and toss until all almonds are well coated.
* Spread in a single layer on a baking sheet / 13 x 9 x 2-inch baking pan.
* Bake for about 10 mins.
* Let it cool completely for about 15 minutes before serving.

Munch with some Coffee/Tea . . . Enjoy :)

Tip:-

You can also add some ground pepper or paprika.
Or

Add some lemon juice for the citrus flavor.
