Cut Mirchi Bajji is one of best recipe from Andhra.This is one of the street food which we get through out the year on streets and restaurants. I love to eat this hot hot lip smacking cut mirchi bajji on rainy day.Its perfect rainy day snack..There are various stuffing for this bajji and vary from place to place.I used very simple stuffing for this cut mirchi bajji because we are going to cut the bajji and deep fry again. If the filling is too much when you cut and fry the filling may come out.

Ingredients:

Long green chillies - 10
Gram flour /Chick pea flour/besan - 2 cups
baking soda - 1/4th tsp
Jeera /cumin seeds powder - 2 tsp
Ajwain /carom seeds powder - 2tsp
Ajwain seeds -1/2 tsp
Turmeric - 1pinch
salt to taste
oil for deep frying

For serving/garnishing:

1 medium sized onion finely chopped
chat masala
1 lime/lemon
Chopped Coriander - 1/2 bunch

Method:


First wash green chillies well.Wipe and dry the green chillies well.

Make a slit on one side of the chillies and carefully remove the seeds using the back side of your teaspoon.If you are a spicy eater, then can leave the seeds as it is, but I usually remove them.

Make a powder for filling

Mix carom seeds powder /Ajwain Powder, jeera powder and salt to taste.

Now fill this mixture into slit chilies lightly and keep aside.
 

Take a mixing bowl add besan / gram flour salt, rice flour ,Ajwain ,turmeric and mix well with water.Prepare a slightly thick batter. Keep it aside.
The batter should not be very thin or very thick.(suppose if the batter becomes watery, add little more besan and mix well)

Heat oil in deep frying pan.


In the batter add baking soda and mix  well.Now dip the powder filled chillies carefully into this batter and drop them in the hot oil.

Fry 3 to 4 chillies at a time depending on the size of ur pan till golden brown.


 Remove them with a slotted spoon and drain well.

 
Now cut the fried bajjis into cut into smaller round bites  and fry in the same oil for few more minutes so that they become more crispy.


Remove them on Kitchen towel to absorb excess oil.

Repeat the same process for the rest of the chillies.

 

Take a mixing bowl, add fried mirchi bajji pieces, add finely chopped onions, Sprinkle some chaat masala on top and squeeze some lemon juice and give a quick mix.Garnish with coriander leaves.
