Uthappam is one of the dosa varieties from south india thats ideal for a breakfast.
If You have leftover Idly batter this is best option to make.Uthappams are topped with chopped onions, green chillis and vegetables like tomatoes or carrots but can be eaten without the toppings too. Traditionally served as a breakfast item but can be served for lunch or dinner and is a complete meal in itself.

Ingredients for batter:-

1 cup Idli rice
1 cup Raw rice
1 cup Urad dal
1 tsp Fengureek seeds
Handful of cooked rice
Salt to taste
A pinch baking soda

Soak the idli rice ,raw rice and urad dal ,Fengureek seeds for about 6 hours, and grind them to a thick batter along with the cooked rice.
Let it ferment overnight, or keep in a warm place for about 8-10 hours.

Ingredients For Uthappam:-

Idly Batter: 4 cups
Red Onion: 1 medium sized
Grated carrot: 1/2 cup
Fresh/Frozen Peas: 1/2 cup (Optional)
Chopped tomatoes: 1/4 cup (Optional)
Chopped green chillies: 2 tbsp
Grated ginger: 2 tsp
Chopped coriander leaves
Salt as per taste
Oil

Method:-

Mix the batter adding ginger, green chillies and salt.
For making Uthappam, heat a iron griddle once hot take a ladle of batter and on the top spread a handful of chopped mixed vegetables and pour a tsp of oil around the batter.
Cover it and cook for 2-3 mins in medium heat and once once side is well cooked and the batter on the top has changed color flip and now cook the other side without covering for a minute.
Once well cooked remove and serve with Coconut chutney or onion chutney or Sambar .

Note:- Note:You can use left over Idly or dosa batter to make uthappams.

    I normally eat onion uthappam from Anapurna restaurant at east fort cochin.
