When I have fresh strawberries on hand sitting on the counter waiting to be used, I often turn to Strawberry Muffins.This recipe for mini muffins is very easy to make.
1 cup All purpose flour
1 cup Wheat Flour
1/2 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
3/4 cup milk
1/3 cup vegetable oil
1 cup chopped fresh strawberries
1 tsp Vanilla Extract
Heat oven to 375º and spray muffin cups with cooking spray or line with paper liners.
In a large bowl, mix the flour, sugar, baking powder and salt. In another smaller bowl, mix the milk, oil,vanilla extract and egg.
Add wet mixture to dry, stirring just enough to mix it together. Do not over mix or the muffins will be tough. Gently fold in the chopped strawberries and mix to ensure they are well coated with flour.
Do not over stir, or the texture of your muffins will suffer. The batter will be lumpy and slightly floury. This is just fine.
Divide mixture and fill muffin cups coated with cooking spray or lined with paper liners two-thirds full.
Bake at 375º for 12 to 17 minutes (mine took the whole 17 minutes) or until a toothpick inserted in the middle comes out clean.
Cool in the pan for 5 minutes and then remove from pan to a wire rack till they are completely cool.
