to make .When you are tired of eating everyday dal, make this whole green moong dal. It is very nutritious and healthy , very easy to digest and excellent source of proteins.
Prep time: 40 Minutes
Serves: 4-5
Ingredients:-
Hara Moong Dal/Green Gram(Bean) - 1 Cup
Tomatoes - 2 Medium
Onion - 1 Large
Red Chilli Powder - 1 tsp
Green Chillies - 5 (slit)
Juice from one lemon
Ginger-Garlic Paste - 2 tsps
Coriander Seeds Powder / Dhaniya Powder- 1 tsp
Turmeric Powder / Haldi - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Kasoori Methi - 1 tbsp (crushed)
Oil - 1 tbsp
Asafoetida/Hing - A Pinch
Cumin Seeds - 1 tsp
Water - 3 Cups (or as needed)
Curry Leaves -few
Salt - To Taste
Chopped Coriander/Hara Dhaniya - 2 tbsp
Method:-

1. Wash and soak moong dal for minimum half an hour . You can also soak it over night.
2. Pressure cook for 4 whistles with 1 1/2 cup water . Once pressure released mash cooked dal slightly.
3. Finely chop onion, tomatoes and coriander .
4. In a Pan /wok heat oil, add cumin seeds and allow to splutter. Add hing , onions and green chillies ,curry leaves and saute for a minute.
5. Add ginger-garlic paste and cook until onion becomes soft or translucent.
6. Add tomato, salt , red chilli powder, coriander seeds powder, turmeric powders and stir well. Cover and cook until tomato gets mashed and oil floats on top. Add crushed kasoori methi and mix everything well.
8. Add garam masala and mix well, cook for a minute, add cooked dal.
9. Add 1 to 1 1/2 cup of water or Add more water if you prefer to have dal thin consistency.
10.Adjust salt if required and bring it to a good boil. Simmer for 2 minutes off flame and garnish with chopped coriander and juice form one lemon.Mix well.
11. Our Hara Moong Dal Tadka is ready add little ghee if preferred.The ghee tadka heightens the flavor of the dish.
Serve it with hot chapatis,phulkas or along with hot steamed rice and some roasted papads and lime or mango pickle also by the side. A truly comfort and satisfying meal..

Rajma Chawal (Rice) is an Excellent Combo and comfort food.Rajma / Kidney beans are an excellent source of molybdenum. They are a very good source of folate, dietary fiber and manganese. Kidney beans are a good source of protein, thiamine (vitamin B1), phosphorus, iron, copper, magnesium, and potassium.Kidney beans are a very good source of cholesterol-lowering fiber, as are most other beans.
Ingredients:-
Rajma/kidney beans- 1 cup
Onion- 1 (chopped )
Tomatoes - 2 (chopped)
Ginger- 1"
Green chillies- 4
Garlic- 3cloves
Cumin Seeds - 1 tsp
Hing / asafetida - A pinch
Red chilly powder- 1tsp
Turmeric powder-1/2tsp
Garam masala - 1tsp
Coriander powder- 1tsp
Kasuri methi- 1tsp
Oil- 2tsp
Salt to taste
Water - 3 Cups
Coriander -to Garnish
Method :-
1) Soak the kidney beans overnight or for at least 12 hours.Soaking Kidney Beans / Rajma for more time helps remove the indigestible complex sugars that create gas in your intestine.Kidney beans will be double in volume after soaking.
2) Pressure cook Kidney beans till 3 whistles.Don't overcook otherwise beans get mushy.Beans should be properly cooked but at the same time they should remain whole.
3) Grind onion, tomato, garlic, ginger and green chillies together in a blender / Mixer.
4) Heat oil in a pan. Add the cumin seeds. When it splutters add hing and grounded paste. Saute for sometime. Add red chilli powder,coriander powder,garam masala and saute till the raw flavor disappears or oil separates from the mixture.
5) Add the cooked kidney beans along with the water and salt and close the pan with lid.Cook for around 20minutes on low heat till the beans mixes really well with the gravy.
6) Kidney beans should be soft and tender. Lightly mash the kidney beans while mixing. Adjust salt, to your taste.
Add little water to adjust the consistency of gravy.
7) Garnish with Chopped Coriander.
8) Serve rajma masala with hot steamed rice , chapatis,phulkas,roti.

Growing Methi :
I Just threw some methi seeds in the soil.Just some sunshine ,water ,garden soil and attention. My own methi plants are grown.
Ingredients for Methi dal:-
1 cup Menthi kura / Fenugreek / Methi
1 cup Toor dal
4-5 green chillis slit length wise
1/4 tsp turmeric
2 Dry red chillis
Few Curry leaves
A pinch Hing
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1 tsp salt
2 garlic cloves crushed
oil
chopped coriander leaves for garnish
small lemon size tamarind
3 cups water
Method:-
1) First wash and pluck methi / Fenugreek leaves .
2) Soak Tamarind in water .
3) Then wash toor dal and add 3 cups of water in a pressure cooker.
4) Now add the washed and picked fenugreek leaves ,green chillies ,turmeric to toor dal and pressure cook upto till three to four whistles or until toor dal is soft.
5) After pressure is released add salt to this cooked mixture and mash with ladle till well combined.
6) Then Add soaked tamarind water / tamarind pulp.Mix well.
7) Heat 1 tbsp oil in a pan and add the mustard seeds and let them splutter.
8) Then add the cumin seeds, crushed garlic ,hing , whole red chilli pieces and curry leaves and fry for a minute.
9) Add mashed dal to this poppu /Seasoning and cook on low heat with lid covered for 5 mins.
10) Garnish with coriander leaves.
Serve hot with rice , ghee, Mango Pickle ,papad , vadiyaalu and you have a complete meal. You can also serve with rotis also.

Spinach Dal is very flavorful ,tasty and healthy dal.Spinach and garlic make a great combination and makes this dal unique.This easy-to-make dish is a super health-booster, too.Traditionally it is served with hot rice, ghee and mango pickle for great satisfying meal. ![]()
Ingredients :
Spinach / Palak - 1 bunch
Toor dal - 1 cup
Red chilli powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Dried Red chillies -4
Oil - 1 tbsp
Tamarind Paste / juice - 4 to 5 tbsp
Mustard seeds - 1 tsp
Cumin seeds / Jeera - 1 tsp
Garlic cloves - 5
Hing - A pinch
Curry leaves -Few
Salt - to taste
Method:-
1. First wash and pluck the spinach leaves Then chop it .
2. Soak Lime sized tamarind in water for juice.
3. Wash and pressure cook dal with chopped spinach in 3 cups of water till 3 whistles .
4. When the pressure is released,remove the lid.
5. Mash the dal to smooth paste using wooden masher and keep it aside.
6. Heat oil in a Pan add crushed garlic cloves and saute them until golden .Take care not to burn.
7. Heat oil in pan add mustard seeds,jeera,red chillies,curry leaves ,hing and fry them . .
8. Now to mashed dal add sauted garlic ,tamarind juice / paste ,red chilli powder,turmeric,salt to taste.
9. Stir well and if the dal is too tight add half cup of water. Mix well and cook in low heat with lid covered for 5 -10 minutes.
10. Serve hot with rice,ghee and mango pickle. It can also be served with rotis and chapatis.
INGREDIENTS :-
1 Cup Toor dal (Red Gram split)
1 tsp Oil
Juice of ½ Lemon
Salt to taste
For the Masala :-
1 inch Ginger
2 - 3 Cloves Garlic
2 tbsp Coriander Leaves
1 big Tomato, Chopped
1 tsp Mustard Seeds
1 tsp Jeera (Cumin Seeds)
1 tsp Turmeric powder
1 medium sized Onion sliced
4 Green Chilies
Salt

Pressure-cook Toor Dal. Grind Ginger, Garlic, Green Chilies, Tomatoes, Coriander leaves and Onions to a paste. Heat Oil in a kadai(wok), add Mustard seeds, Jeera and Turmeric powder. Add the masala paste to the Oil and fry until the moisture evaporates. Add the boiled Toor Dal and Salt to the masala and cook for 4 minutes. If it is very thick add a cup of water and stir.
Remove to a serving bowl and add Lemon juice and mix well. Serve hot with Ghee Rice or Roti's.
