Instant Oats Idli / Oats Indian Recipes / Simple and Quick Diabetes Diet

When you are on a diabetic diet, the usual idli and Dosa doesn't suit as it is made with rice. So for them this dish is perfectly suitable as this Idli is made with oats and Bombay Rava .This is very quick to make and very tasty to eat and tastes same like rava idli.
Makes :-12 Idlis
Ingredients:-
Instant oats - 1 cup (I used quaker oats)
Rava - 1/2 cup (I used Bombay rava, you can use wheat rava also)
Water - 1 cup or as required
Curd - 1/2 cup
Salt - to taste
Carrot - 1 medium , grated
Mustard Seeds - 1tsp
Green chilli - 2-3 , finely chopped
Few Broken Cashews
Hing - 1/2 tsp
Coriander leaves - Few finely chopped
Curry leaves -Few
Baking soda / fruit salt - 1/2 tsp
Oil - to grease idli plates
Oil - 1 tsp
Method:-
1) First dry roast Oats for 3-5 minutes in medium flame until nice aroma comes and set it aside .Cool it completely then grind it to a fine powder. Transfer to mixing bowl.
2) Then dry roast rava for 3-5 mins until nice aroma comes, then set it aside. Transfer to mixing bowl.
3) Heat oil in a pan and add mustard seeds .When it splutters add bengalgram dal , broken cashews , curry leaves,hing ,ginger,green chillies.Saute for a minute then add the veggies u want to add ( I added grated carrot )and chopped coriander leaves. Give it a quick fry .Transfer to mixing bowl,add salt,curd ,water as required and make a batter. The consistency should be similar to rava idli batter consistency (neither too runny nor too thick). Mix well.
4) Add Eno fruit salt or baking soda just before making idlies and mix well. This will give you a frothy/airy batter which gives a soft spongy idlies.
5) Pour the batter in to a greased idly plates and steam just like the regular idlies but for more time,say 13-15 minutes,until done.
6) Cool for a minute and transfer to a serving plate.Serve hot with any chutney of your choice or with Sambar.

Ingredients :-
Oats (instant) – 1 cup
Mixed vegetables (carrot,corn,peas) –2 cups
Onion – 1, small, chopped
Green chillies – 2, slit lengthwise
Oil – 1 tbsp
Salt
Water – 2 cups
Mustard seeds – 1/2tsp
Cumin seeds - 1/2tsp
Chana dal – 1 tbsp
Urad dal – 1 tbsp
Curry leaves – few
Method :-
Heat oil in a pan and add mustard seeds.Let them splutter and add cumin seeds,urad dal, chana dal,green chillies and curry leaves. Add chopped onions. When onions turns soft, add all the vegetables and sauté them for 2 mins . Add water to the vegetables and bring to a boil. Add salt to taste and oats, and mix thoroughly. Cover and cook over a medium flame for 10 minutes until the oats is cooked through and absorbs all the water. It should not turn very mushy. It tastes best if it still remains chewy.When done, oats should be soft, but chewy. Garnish with coriander and serve hot with yogurt and pickle :-)
This could be a tiffin, breakfast and also a lunch-box dish for sure.
Whenever idlis are left over then you can try this simple quick Idli Upma.It is simple but very satisfying.My Mom used to make this delicious dish for breakfast or evening tiffin and all of us would enjoy it. So,here is the simplest recipe for left over idlis.
Ingredients:
6 left over idlis, crumbled
1 onion, finely chopped
2 green chillies chopped
1/2 tsp turmeric powder
pinch of asafoetida / Hing
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp urad dal/ minappa pappu
few curry leaves
salt to taste
chopped coriander leaves for garnish
1 tbsp oil
Juice of 1/2 a lime
Method:-
1) Heat oil in a pan, add mustard seeds and let them splutter. Then add cumin seeds , urad dal and let it turn red. Add curry leaves, asafoetida and turmeric powder.
2) Add chopped onions and saute till they turn transparent. Tip (Add little bit of salt so that onions cook quickly).
3) Add the chopped green chillies and fry for a minute then add crumbled idlis and mix well. Cook for 5 mins.
4) Adjust salt (Idlis will have salt, so be careful while adding salt)..Turn off the heat.Pour lime juice over the idli upma and mix well.
5) Garnish with coriander leaves and serve hot.

Poha or Atukulu or Rice flakes or Beaten Rice is used widely in Indian homes.Atukula Pulihora is very simple ,easy and quick to make.It tastes very delicious and awesome.My mom makes the best Atukula pulihora . We make it frequently at home. It can be eaten as Breakfast /Brunch /Tiffin.Its a great picnic meal too.
Ingredients:-
Beaten rice (hard variety) / Atukula / Poha (Jada) – 2 cups
Tamarind – small lime size ball
Salt – 1 ½ tsp
Turmeric powder – 1 pinch
Jaggery – 1 tsp
Chilli powder – 1 tsp
Cooking oil – 2 tbsps
Cumin seeds - 1/2 tsp
Mustard seeds – 1/2 tsp
Spilt Black gram dal /urad dal – 1 tsp
Bengal gram dal /chana dal – 1 tsp
Ground nuts - 2 tbsps
Dry Red chillies – 2
Hing a pinch
Curry leaves – a few
Coriander for garnishing
Method:-
1. Wash the Beaten rice /Poha/ Atakulu 2 times and drain out the excess water.
2. Soak tamarind in enough warm water and extract the pulp to make 1.5 cups.
3. Add salt,turmeric, red chilli powder and powdered jaggery to tamarind juice.
4. Soak washed beaten rice in the prepared tamarind juice mixture for 15 minutes or until it absorbs all the liquid and the flakes become soft, fluffy and separate.
5. Heat oil in a pan, add mustard seeds and cumin seeds , when the mustard seeds splutter, add urad dhal ,chana dal and chopped green chillies fry for 1 minute.
6. Then add groundnuts when they fry add red chillies and curry leaves and hing.
7. Then Add the soaked beaten rice / atukulu, and well blend with the seasonings.
8. Cover and cook for 8 minutes on low heat.
9. Switch off the flame and garnish with choped coriander.
10. Lip Smacking Atukula Pulihora is ready to serve.

Uthappam is a kind of dosa with is very famous in south India. Basically it is made out of sour dosa batter. Almost all vegetables can be added to the uthappam. We can make different types like Onion uthappam, Vegetable uthappam, Paneer uthappam, and Capsicum uthappam.Onion uthappam is one type of it. This is one of the regular breakfast in my family.
Ingredients:
Dosa Batter– Required Amount
Onion – 3 (finely chopped)
Cooking Oil
Method:-
Heat dosa tawa / pan and rub the pan with a cloth dipped in oil or a plain red onion. Take a ladleful of batter and spread the batter in a circular motion from the centre of the tawa to the sides of the tawa. Spread the batter little thicker and small enough.(I made it little bit thin as my husband likes that only.)Spread 3 tbsp of onion on the dosa and press it with the ladle. Pour 1 tsp of oil on the edges of the dosa. When one side is cooked well (turns little brown), Flip the dosa to the other side and let it cook well. Once it is cooked remove the dosa from the pan and transfer to the plate.Serve hot with Coconut Chutney and sambar.
