In andhra we call this snack as borugulu mixture or maramaralu masala  . This snack needs no introduction to any andhrite and can be found in pretty much every corner of the street in andhra.It tastes heavenly and very comfort food . I miss all the chaats, masalas, bajjis...list goes on.This being my and my hubby's favorite snack, i make this most often  on weekends.

Ingredients:

    * 4 cups puffed rice / murmur ( borugulu or maramaralu)
    * 1/2 cup onion chopped finely
    * 1 tomato chopped finely
    * 1/4 cup Mango chopped
    * 1 lemon juice
    * 1/2 tsp red chilli powder
    *  3-4 tsp oil
    * salt to taste
    * 1/4 cup Roasted peanuts
    * 1/4cup, putnalu/roasted gram dal
    *  chopped cilantro to garnish

Method:


I am not giving the exact measurements because, you can add them according to your taste.                 

    * First lightly toast the puffed rice for a minutes to make it crisp.
    *  Then take a big bowl, add the puffed rice, few teaspoons of oil and mix well.
    * Now add salt and the chilli powder. The oil makes the salt and the chilli powder stick to it.
    * Add finely chopped onion , tomato, mango , cilantro and freshly squeezed lemon juice.Mix well.
    * Taste and adjust the seasoning . Serve it,with topped roasted peanuts and roasted gram dal.

Note:-

1) You can also add grated carrot.
2) Adjust the spice levels according to your taste.


Uggani is an amazing dish made from a simple puffed ric /Borugulu.This is a popular snack from Rayalseema, south Andhra. . You can find Uggani being sold in road side shops in Rayalseema. They have this as a big heap with Green chilles decorated on top. Uggani is usually served with Mirapakaya Bajji.We can eat it as breakfast / Brunch /Snack /Dinner.

Ingredients :

Puffed Rice / murmura / Borugulu - 1 large bowl
Onion - 1 (Chopped )
Green chillies - 4 or 5 (slit lengthwise) or you can also make paste
Turmeric powder - 1/4 tsp
Curry Leaves - few
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Oil - 2 tbsp
Salt to taste
Roasted chickpea powder(putnala pappu podi) - 1 tbsp
1 lime
Roasted peanuts - 2 tbsp
Coriander leaves to garnish

Method :

1) First Grind fried gram dal/ roasted chickpea / Putnala pappu into fine powder.

2) Take a big bowl fill half of it with water add the puffed rice in water and soak it for about 5 mts. Because of lightweight, they will float. Using your hands push them under water for few seconds.Let them soak water. After 5 minutes, remove them from water ,squeeze away the water by taking a handful of soaked puffed rice each time.Remove them all from water in this way and put them in another bowl. Don't keep it for long as it becomes very soft and uggani will not be perfect.

3) Once you have removed all the water, add the roasted chickpea powder and salt. Mix well. Keep it aside.

4) Heat 2 tbsp of oil in a pan, add mustard seeds. When they splutter add cumin seeds, curry leaves, turmeric,chopped onion, slit green chillies. Fry for sometime till onion become transparant.Then add roasted peanuts,puffed rice, and mix well. Keep it on low flame for  5-8 mins, before removing, add lemon juice and mix well then garnish with chopped Coriander leaves.

5) Uggani is ready to serve.This is best served with Mirapakaya Bajji or Chilli Bajji.It can also be eaten by itself.



BhelPuri is a very famous and tasty chaat that one can find anywhere in India.Bhelpuri is a sweet and spicy combination of puffed rice, onions, tomatoes, puri, sev, coriander, chillies and chutneys. Everyone has a different style of making bhel. Any version of this dish is delicious and lip smacking.Bhel puri is my all time favorite chaat.


Ingredients:-

* 2 cups Puffed rice
* 1 Onion, peeled and finely chopped
* 1 Tomato finely chopped
* Coriander leaves, finely chopped
* 2-3 tbsp Peanuts, roasted
* Raw Mango – small piece, finely chopped (optional)
* 4-6 tbsp Sev
* 1/2 cup Crispy Puris
* 1 tsp Red chilli Powder
* 2-3 green chillies chopped (Optional)
* Salt to taste
* Tamarind Chutney to taste
* Green Chutney to taste


Method:-

1) In a medium bowl, mix together Puffed Rice, Onions, Tomatoes, Raw Mango, Cilantro red Chilli Powder,salt,green chillies and peanuts.
2) Add Tamarind Chutney and Green Chutney according to your taste. Remember that Tamarind Chutney is sweet and Green Chutney is hot and sour.
3) Lightly crush and add the nimkis / puris.
4) Mix well and serve immediately by garnishing with chopped coriander leaves and sev.

Chatpati Bhel Puri is ready:)


Note:-

1) Depending on the freshness of your puffed rice, you may want to lightly roast the puffed rice in a skillet to make it crispy.
2) You can store these chutneys in a container and keep refrigerated.
3) Bombay Bhel puri mix is available in the stores, just buy that and add chutneys and ingredients of your choice.
