My family is a big pickle fan and off all the pickles they really like lemon pickle a lot .My daughter is crazy for this pickle.This is a very easy recipe with no-oil and no-cooking involve in this pickle and with only 3 ingredients .It's so difficult to resist this tangy, and tongue tickling pickle . Kids will enjoy this pickle very much :-)

Ingredients:-
2 Kgs - Lemon
3/4 Kg /2 Cups - Salt
50 gms/ 1/4 Cup - Turmeric Powder
Method:-
1) Take out a glass or plastic jar that can hold about 1 kilo of pickle. The jar should be completely dry.It is very important.
2) Wash the lemons and wipe them thoroughly. Make sure there is no water on the skin. Let them dry for some time.
3) Cut them into small bite sized cubes.
4) 10 lemons squeeze them and take the juice in a bowl.
5) In a bowl take the cut lemon pieces add salt , turmeric powder and lemon juice which we squeezed and mix all these well.
6) Take them in a clean, dry glass or porcelain jar or plastic jar with tight lid. Keep them tightly covered .Leave them as it is for 15 days.Then open the container and see if pickle is fine.As the pickle gets ready, the lemon pieces get softer.Close the lid again and leave it for about 30 - 45 days.
7) This time period depends on the thickness of lime rinds. If they are thin, they will soften up within a 15 days and if they are thick, they would take at least a month to 45 days.
8) My recipe is prepared with thin skinned, juicy limes and they changed from hard to firmly-soft in a month.
9) Serve and enjoy with curd rice or rice, dal and ghee .
Tips:-
1) Pickling is like making jam. Take extra precaution in using the dry utensils, jars, spoons and your hands. Using the wet or damp things is a sure way to spoil the pickle.
2) Better transfer small quantity in a smaller container which can be used to serve.
Rava Pulihora with Lemon / Nimmakaya Rava Pulihora

Ingredients:-
Lemons - 2 (Large size )
Rice rava ( Biyyapu Rava) - 1 glass / 250 ml
Water – 2 glasses
Channa dal (bengal gram)– 2 tbsp
Cumin seeds – ½ tsp
Mustard seeds – ½ tsp
Groundnuts - 2 tbsp
Green chillies – 10
Red chillies – 4
Curry leaves - 10
Oil – 2 tbsp
Hing (asafoetida) -a pinch
Salt to taste
Method:-
1) Usually we get Rice Rava (Biyyapu Rava) in Indian stores. Or else, wash the rice and dry it on a cloth. Grind to coarse mixture.
2) Soak the chana dal for at least 20 minutes.
3) Heat a pan add 1 tsp oil, Add 2 glasses of water (500 mi) ,salt 1/2 tsp ,1/4 tsp of turmeric.
4) When water is boiling add channa dal .
5) Stir continuously for a minute and put a lid. When it cooks completely then add rice rava. Stir it well and put a lid,Reduce flame and cook till soft. It just takes 5 mins to get cooked . . When it cooks completely switch off stove and open lid after 10 mins.
6) Cool out the cooked rice rava on a wide or big plate.
7) Mean while cut lemon and squeeze their juice in a bowl along with 1 1/2tsp of salt and keep it aside.
8) Heat oil in a pan fry ground nuts /peanuts till nice golden color remove and leave a side.Now add mustard seeds.After they splutter add cumin seeds,red chillies,slit green chillies ,curry leaves, asafoetida and 1/4 tsp turmeric powder and fry for a minute.Then switch off the stove.
9) Add the seasoning and lemon juice to cooked rice rava and mix well without any lumps and lemon juice coats evenly.Mix roasted groundnuts.Adjust the salt and lemon juice if required.
10) Serve it after an hour or 2 hours.
Tasty and sour nimmakaya rava pulihora is ready to serve.
Serve with appadam or chips.
Tip:-
Pulihora tastes best after sitting for a couple of hours from the time of preparation.

2 Cup Cooked Rice
2 Lemons
2 Tsp Chana Dal (Senaga Pappu )
2 Tsp Urad Dal (Mina Pappu)
1 teaspoon Mustard Seeds (Avalu )
1 teaspoon Cumin Seeds (Jelakara)
10 - 12 Curry Leaves (Karvepaaku )
4 Tsp Peanuts (Pallilu)
Pinch Asafoetida( Inguva)
2 teaspoons Turmeric Powder( Pasupu)
5 Green Chillies Slit Vertically
3 Dried Red Chillies
2 Tsp Oil
Salt to taste
Method:-
- Cook rice with 4 cups water. Add 1 teaspoon of oil to the rice while cooking so that grains won’t stick.
- Heat oil in a frying pan on medium heat.
- Sauté fried red chillies, each cut into two, urad dal, chana dal, peanuts, cumin seeds and mustard seeds. When the mustard seeds start to crackle, then add green chillies, curry leaves. Remove from heat and add asafetida and turmeric powder.
- Add this seasoning to cooked rice. Squeeze lime in to cooked rice.
- Add salt and mix well very gently so that rice grains do not break.
