Spinach Walnut Pesto


Spinach walnut pesto Ingredients:-

Spinach- 2 cups chopped (blanched)
Walnuts- 1/2 cup
Garlic- 2 cloves
Parmesan Cheese grated - 1/2 cup
Ground nutmeg -1/4 tsp
Olive Oil - 1/4 cup
Pepper to taste
Salt to taste

Method:-

      Toast the walnuts lightly in a small pan. Combine all the ingredients in your blender. Blend this to a smooth and loose and creamy consistency. It yields around 2 cups.Serve with hot pasta, or cheesy sandwiches etc...
      This pesto freezes very well. Freeze in ice cube trays. Once frozen, transfer the cubes to a  freezer bag. Then you can just remove and defrost when ever you needed.

 Vegetable Pasta with Spinach Walnut Pesto

For the pasta Ingredients:-

Any variety of pasta- 1 cup (I used Shell Pasta)
Capsicum -1 chopped
Carrot - 1/2 chopped
Crushed black pepper- 1tsp
Spinach walnut pesto sauce- 1 cup
Parmesan cheese - 1/4 cup
Salt to taste
Olive Oil- 1tsp

Method :-

  Cook the pasta according to the package directions.Drain the water. Wash with cold water to prevent it from sticking to each other. Heat oil in a pan. Add the chopped capsicum and carrots. Cook till they turn soft. Now add the cooked pasta. Add the pesto sauce and mix till the pasta is well coated with the sauce. Then Add salt and pepper to taste . Combine well and remove from flame after a minute. Garnish with grated Parmesan cheese and serve hot.

 My daughter likes pasta which is usually prepared as  dinner for her. She loves the cheesy flavor.Addition of vegetables makes it healthy and colourful too :)



Ingredients:-

3/4 packet of pasta (penne ,shells or fusilli )
1 cup mixed vegetables (Orange capsicum , carrot ,broccoli)
1 1/2 tsp plain flour (maida)
3/4 cheese cube
3/4 tsp dried oregano
3/4 tsp dried thyme
salt to taste
1 tsp black pepper (kalimirch) powder
1 tsp butter
3 big cloves of garlic, grated
1 1/2 cups milk

Method:-

For the pasta

Cook the pasta in boiling water with some salt and  Drain and set aside.

For white sauce:-

   1. Heat butter in a pan.Add the grated garlic and saute for a minute.
   2. Once its done add the flour saute for a second let it not turn brown.
   3. Add milk nd stir it continuously to avoid lumps.
   4. Once the mixture starts thickening add oregano,thyme,salt,pepper powder.
   5. Add grated cheese.
   6. Keep this sauce aside.

For the vegetables:-

   1.Heat butter in a pan. Add the chopped vegetables and saute till it becomes tender.
   2. Dont over cook the vegetables it has to be crunchy.

To serve:-

   1. Put the sauce back on flame.
   2. Add all the cooked vegetables and the boiled pasta.Mix well.
   3. At the time of serving you can sprinkle more cheese.
   4. Serve hot.



 Makes 2 servings

Ingredients:

   
    * 2 cups cooked whole wheat pasta in small shapes like macaroni, rotini, or small shells
    * 1 tbsp olive oil
    * 1 cup tomatoes, diced
    * 1 small onion chopped
    * 1 cup chopped spinach, fresh or frozen
    * 1 tbsp minced garlic
    * salt and pepper to taste
    * 1/4 cup shredded Parmesan cheese
    * 1 tbsp toasted pine nuts (Optional)

Method:

   1. Cook pasta in a large pot of boiling salted water until al dente ( little bit kachha / Not fully cooked), according to package directions.Drain it and keep it aside.
   2. Heat olive oil in a medium nonstick saucepan over medium heat and saute onion.When the onions become transparent add the tomatoes, spinach, and garlic and continue to saute for a few minutes until spinach is wilt and and tomatoes are soft. Add some salt and pepper to taste if desired.
  3. Stir in the cooked drained pasta and continue to cook and stir the mixture for a 2 minutes to heat up the pasta and blend the flavors. Sprinkle Parmesan cheese over the top and turn off the heat. Let the dish sit for a couple of minutes, garnish with  pine nuts , and serve!


Serves ~ 3

Ingredients:-


1 cup uncooked Garden Rotini pasta
2 carrots, peeled, thinly sliced
1/2 cup frozen peas
2 Roma tomatoes, finely chopped
1/2 tsp Italian seasoning
1/2 tsp garlic powder
1 tbsp extra virgin olive oil
2 tbsp grated Parmesan cheese

Method:-

1. Cook pasta as directed on the package.
2. During the last 3 minutes of cooking the pasta, add the chopped carrots and peas.
3. Drain pasta and keep it aside.
4. Heat oil in a pan.Add fresh tomatoes and let it cook for 5 mins. Then add cooked pasta.
5.Sprinkle Italian seasoning and garlic powder over pasta. Add salt and pepper to taste. Gently stir to mix.Switch off the stove.
5. Transfer pasta to serving platter. Sprinkle with Parmesan cheese.
6. Serve and Enjoy  yummy Pasta !!!


The most basic of cooked sauces and the simplest, tomato and basil sauce is the benchmark of a good Italian home cook.Pasta is comfort food for us at home and easy peasy and yummy. This delicious pasta dish is easy to make and is a great quick fix for a lazy Friday night dinner.


Ingredients:-

  • 95 g pasta of any type (you could use any pasta here,macaroni , long, thin, short, tube: this is one sauce which works well with all the pastas)
  • 30 ml extra virgin olive oil
  • 2/3 clove crushed garlic
  • minced 1tbsp dried basil,( Since I don't have fresh Basil)
  • 120 g diced tomatoes
  • crumbled 3 oz (90 g) Parmesan cheese
  • salt and freshly ground pepper to taste


Method:-

1) Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
2) Dice the tomatoes in small chunks and keep aside.
3) Heat the oil in a large skillet, add garlic .As soon as the garlic gives off its aroma and becomes opaque add the tomatoes, and the spices, and cook on medium heat in a skillet, until the tomatoes look like they're well-cooked (about 10 minutes or so). Then, if you need the extra sauce, add it, but not more than 1/3 cup.
4) When the pasta is done, drain and add it to the sauce. Mix it well.Sprinkle on salt and pepper.
5) Toss warm pasta with Parmesan Cheese .
6) You can add more Parmesan and dried basil if desired. Serve immediately.


Tip:-After you have a basic tomato sauce in hand you could do zillions of variations; add grilled veggies ,spinach etc.
