
Bombay Street Food: Pav Bhajifrom Nupur's blog is my contribution to "Tried and Tasted" , a event which is started by Zlamushka from "Zlamushka's spicy kitchen" blog. This month we are scouting Nupur of "One Hot Stove" blog looking for and cooking one of her recipes to appreciate her blog. Thanks for hosting Z, it's a fun event. Ingredients:
1 small head of cauliflower, cut into florets (about 3-4 cups)
3 medium potatoes, peeled and cut into large chunks
2 tbsp oil
1 green bell pepper, minced
1/2 tsp turmeric powder
1 tsp chili powder
1 tsp ginger-garlic paste
salt to taste
3 Tomatoes finely chopped
1/2 cup peas (fresh or frozen)...optional
1/2 tsp garam masala
2 tbsp Everest pav-bhaji masala
1 tbsp butter
Coriander enough for dressing
Method:
1. Boil the cauliflower and potatoes till tender and set aside. I usually do this in a pressure cooker.
2. Heat oil in a deep saucepan add ginger-garlic paste saute then and add the onions and fry until transparent.Then Add tomates and capsicum and fry for 2 minutes.
3. Add turmeric powder, chili powder to taste and salt to taste. Saute for a few seconds.
4. Then add peas, boiled potatoes and cauliflower,garam masala, pav-bhaji masala and butter.
5. Keep sauteing and mashing it together till it is a smooth mixture, adding water as required . Simmer for 20-25 minutes to really get the flavors to meld together.
You have to keep tasting and adjusting salt and masala.
For Pavs
Slit pavs horizontally leaving one edge attached. (To open like a book). Make masala pav...melt some butter in a skillet. Sprinkle pav bhaji masala in it, then fry the pav in this spicy butter until sizzling and golden.
Serve with:
1. More pats of butter
2. Finely chopped onions, minced Coriander and wedges of lemon.
I have never made these at home, just ate from outside.

Gosh! you make is sound so easy. I live in Mumbai so always find it easier to go across the street and eat it at an udupi but this seems just as easy.
