Carrot Halwa(Gajjar ka Halwa)

Gajjar Halwa is one of my Families Favorite dish. So my Mom makes it oftenly.
Here is another great recipe from my mom. It's a dessert that warms up your heart, whether you eat it hot or cold. I personally love to eat it as soon as you turn off the burner.




Ingredients:

Grated Carrots - 3 cups

Milk - 1 1/2 cups

Sugar - 1 cup

Ghee - 3 tbsp

Cardamom Powder - 1/2 tsp

Saffron Strands - a pinch

Chopped Cashew nuts - 2 tbsp

Raisins -1/4

Method:
Peel and grate carrots.In a heavy saucepan , fry the grated carrots in a tablespoon of ghee for one minute. Then add the milk and saffron and pressure cook for one whistle.
To this, add sugar and keep stirring in a heavy saucepan in medium heat.


When complete moisture is absorbed, add half of the ghee. Fry for two more minutes and remove from heat.

Fry the cashew nuts and Raisins in the remaining ghee and add it to the halwa with the cardamom powder. Mix well. Serve warm or at room temperature.

I chose the Zodiac Sign : CAPRICORN which corresponded to carrots. I selected this as it is my husbands zodiac sign.

Capricorn men are cautious to begin with. But, once you show that you are sincere. They are very wonderful trust worthy people. The work with you not only toward their goal but your goal as well. They communicate well. The look at long term..not short. And can be very good partners.

• Miserly and grudging


Note: In India, it is very popular to serve warm "gajar halwa" with vanilla ice cream. It is yummy.
