0 comments Posted by ST at Sunday, September 25, 2016Groundnut / Peanut Ladoo is made with groundnuts and jaggery as main ingredients.It is very easy to make, tastes delicious and healthy too.Groundnuts are high in protein and jaggery is rich in Iron so these ladoos are energy booster ,nourishing and healthy.No ghee is needed to prepare these ladoos.Kids will love it as it is soft .My daughter loves this peanut ladoo very much.This can be packed for kids snackbox too.

Ingredients :-
Raw Peanuts / Groundnuts/ Shengdana - 1 cup
Powdered Jaggery - 3/4 cup adjust according to taste
Cardamom powder - a generous pinch
Method:-
1) Dry roast the groundnuts till nicely browned and the outer skin start to come out.
2) When it cool down little bit rub the groundnuts with your hands and blow away the skin .But I don't prefer to remove the skin of groundnuts.
3) Grate or powder the jaggery and keep it aside.
4) Now put the groundnuts in a mixer and give a quick grind as fine as possible.It will be slightly coarse only.
5) Then add the powdered jaggery to groundnuts powder. All together grind this mixture in a mixie till they are well combined.
6) When you grind this mixture in a mixie ,oil from groundnuts oozes out and helps in binding a ladoo .
7) Transfer this mixture to a bowl, add cardamom powder .Mix well and break the lumps formed.
8) Shape them into small balls.No need to grease at all, as the oil in groundnuts is just enough to hold together.
9) Groundnut Ladoos are ready .Store in an airtight container.
Tips:-
Sweetness is just perfect but if you want more then add 1 cup of jaggery.
If it hardens in the end for the last few balls then heat up the mixture for a minute, jaggery will melt then you can make balls or again grind for a minute in a mixie then you can make ladoos.
This Spicy Peanut chutney is very easy to make .This chutney tastes great as we grind the tempering here and mix it with peanut garlic paste. It tastes great with Idlis , Dosas and Upma.

Ingredients :-
Peanuts / groundnuts (roasted) - 1 cup /150 gms
Garlic - 5
Chilly powder - 1½ tbsp
Tamarind juice - ¼ cup
salt to taste
water - 1/2 cup
For poppu/tadka/seasoning:
Mustard seeds - ¼ tsp
Cumin seeds - ¼ tsp
Urad daal - 2 tbsp
Curry leaves - 2 sprigs
Oil-2 tbsp
Hing - A pinch
Method:-
Heat oil in a pan on medium flame .Add crushed garlic cook till it is slightly fried.Add roasted peanuts slightly fry.Add red chilly powder and switch off the flame.Then add tamarind juice, salt, mix this all together. Put it into the blender and make a paste. You have to add lot of water for grinding because peanuts when we make paste it really get thick.We have to make chutney into a pouring consistency.
For tempering heat oil in a pan and add mustard seeds, when mustard seeds splutter,reduce the flame.Add cumin seeds, Urad dal,hing, curry leaves and cook on slow flame.Roast this till Urad dal is golden in colour.Let it cool down put it into the blender make a coarse powder.
Take a bowl add peanuts garlic paste and add the tempering mixture, mix it well.
Spicy fiery Peanut Chutney is ready.
Serve this with Idli , Dosa , Upma.

Peanuts curd chutney ~ Navratri Special Recipe / Vrat Recipe
1 comments Posted by ST at Tuesday, September 23, 2014Peanut curd chutney is a Fasting / Vrat chutney. It is the best accompaniment for fasting /Vrat recipes such sabudana vada,Kuttu ki puri ,Ragira puri ,Vrat ke chawal etc.It is very easy to make and is delicious to eat.
Ingredients :-
2 cups Peanuts /Groundnuts roasted
1 1/2 cups fresh Curds /Yogurt/ Dahi
5 Green Chillies chopped
1 tbsp Lemon Juice
2 tsp Cumin Seeds (jeera)
Rock Salt or sendha namak to taste
Method :-
Heat a pan and roast peanuts in it on low flame for 5 mins.
Switch off the flame and keep it aside.
After it is lightly cooled then coarse crush the roasted peanuts in blender or mixer.
Add chopped chillies ,cumin seeds ,rock salt and blend it in a mixer.
Then add beaten curd and lemon juice and blend in a mixer till smooth without using any water.
Serve it with Sabudana Vada ,Sabudana Thalipeeth ,Kuttu Ki Puri ,Vrat ke Chawal etc.
Tips:-
Adjust spice according to your taste
Store refrigerated in an air-tight container and use when required.
Do not add any water while grinding, or the chutney might become watery.

Ingredients:
1 1/2 cup Peanuts / Groundnuts
1/4 cup Rice flour
1/2 cup Gram flour / Besan
1 1/2 tsp Red chilli powder
1/2 tsp Turmeric
1 tbsp Coriander powder
1/2 tsp Cumin powder
1 tsp Green chili paste
1/2 tsp Black pepper powder
1 tsp salt, adjust to taste
1/2 tsp Mango powder /amchoor
1/8 tsp Citric acid
1 cup Water
Oil to deep fry
Method:-
1) In a Non stick pan dry roast grondnuts for 5 minutes on medium flame.Then let it cool down.
2) In a big bowl mix Gram flour ,Rice Flour, Red chilli powder,coriander powder,cumin powder,green chilli paste,salt,turmeric,black pepper powder,amchoor,citric acid well.
3) Add roasted groundnuts to the mixture bowl.
4) Then add water as reqiured making sure the spices and flour stick to the groundnuts uniformly.
5) Heat the oil in a pan on medium heat for deep frying.
6) Apply few drops of oil to your hand so that you can drop groundnuts easily in the oil. While dropping the grondnuts into oil, loosen them with your fingers to make sure the groundnuts are separated and do not form lumps. Groundnuts should be separated while frying.
7) Fry the groundnuts until they turn light brown.
8) Take them out of the oil with a slotted spoon. Place them on a paper towel to absorb the extra oil.
9) After cooling to room temperature, the Groundnuts become crispy.
10) Store Masala Peanuts / Groundnuts in a air tight container.They can be stored for a month.

Peanuts are a great source of protein. They are good body builders. It helps in development of new cells. They are also rich in Fat. Peanuts high niacin content helps in recovery of cell damage provides protection against Alzheimer’s disease and age related cognitive problems. Peanuts are rich in calcium which helps promotes healthy bones.
Ingredients:-
Ground Nuts / Peanuts / Pallilu - 1 Cup
Cumin Seeds / Jeera - 1 tsp
Garlic --- 2 cloves
Red Chilly Powder - 1 tsp full
Salt - 1 tsp full
1) Dry Roast peanuts in a pan.Let them cool.
2) Remove the skin of peanuts by rubbing them in arms.
3) Make sure that the blender is completely dry.
4) Being we are going to prepare powder … if any wetness is there lumps will form and the powder sticks to the blender .
5) Add these peanuts, cumin seeds, garlic cloves, red chilly powder and salt to a blender.Blend it to a coarse powder.
6) Store it in a dry and air tight container.
7) This Podi /Powder remains fresh for 3-4 weeks if stored in dry air tight container.
8) Serve in a little heap as an accompaniment to any home-style meal such as dal and rice, yogurt rice or chapati and vegetables. This is the way it is traditionally served.
9) Serve it with hot bowl of rice and ghee or with chapati or paratha or upma.
10) Stir into yogurt for an instant dip.
11) Add some yogurt to the chutney and enjoy with poli/chapati/Paratha.
12) Eat with vada pav .
13) Mix with untoasted sesame oil to make a chutney for idlis and dosas.
