Peanut ladoos | Groundnut laddus | Easy ladoo recipe
0 comments Posted by ST at Sunday, September 25, 2016Groundnut / Peanut Ladoo is made with groundnuts and jaggery as main ingredients.It is very easy to make, tastes delicious and healthy too.Groundnuts are high in protein and jaggery is rich in Iron so these ladoos are energy booster ,nourishing and healthy.No ghee is needed to prepare these ladoos.Kids will love it as it is soft .My daughter loves this peanut ladoo very much.This can be packed for kids snackbox too.

Ingredients :-
Raw Peanuts / Groundnuts/ Shengdana - 1 cup
Powdered Jaggery - 3/4 cup adjust according to taste
Cardamom powder - a generous pinch
Method:-
1) Dry roast the groundnuts till nicely browned and the outer skin start to come out.
2) When it cool down little bit rub the groundnuts with your hands and blow away the skin .But I don't prefer to remove the skin of groundnuts.
3) Grate or powder the jaggery and keep it aside.
4) Now put the groundnuts in a mixer and give a quick grind as fine as possible.It will be slightly coarse only.
5) Then add the powdered jaggery to groundnuts powder. All together grind this mixture in a mixie till they are well combined.
6) When you grind this mixture in a mixie ,oil from groundnuts oozes out and helps in binding a ladoo .
7) Transfer this mixture to a bowl, add cardamom powder .Mix well and break the lumps formed.
8) Shape them into small balls.No need to grease at all, as the oil in groundnuts is just enough to hold together.
9) Groundnut Ladoos are ready .Store in an airtight container.
Tips:-
Sweetness is just perfect but if you want more then add 1 cup of jaggery.
If it hardens in the end for the last few balls then heat up the mixture for a minute, jaggery will melt then you can make balls or again grind for a minute in a mixie then you can make ladoos.
Papaya Halwa is a simple, nutritious and yummy sweet dish .It can be made for special religious events and can be eaten
for vrat / fastings also.
Ingredients :-
Medium semi ripe papaya 3 cups (chopped into cubes or grated)
Ghee - 2 tbsp
Sugar - 5 tbsp (adjust according to your taste)
Cardamom Powder - 1/2 tsp (Optional)
Almond powder - 2 tbsp (Optional)
Cashew Nuts - 12 halved
Raisins - few (optional)
Method:-
Ingredients :-
Medium semi ripe papaya 3 cups (chopped into cubes or grated)
Ghee - 2 tbsp
Sugar - 5 tbsp (adjust according to your taste)

Cashew Nuts - 12 halved
Raisins - few (optional)
Method:-
- First rinse and peel the papaya.
- Cut into half and remove the seeds and pith from it.Slice the papaya and chop finely.
- In a pan add the milk and let it boils. In a Kadai or pan fry the cashews and raisins in a tbsp of ghee and keep it aside.
- For making Almond Powder I crushed 15 almonds in a mixer.
- Add a tbsp of ghee in a same kadai or pan. Then add the papaya cubes.
- Cook on a low flame for about 15 minutes.Keep stirring in between.
- The fruit will release it juices and little bit change the color.
- Now mash the papaya well with the back of the ladle.
- Add sugar and then stir well. Continue to cook for further 5 minutes on a low flame
- Now add the boiled milk in the papaya sugar mixture and keep stirring for about 20-25 minutes on low flame until ghee will start to separate.
- Cook for 5-6 minutes more till the whole halwa has gotten together or halwa starts to leave the sides of the pan.
- Add the cardamom powder and fried cashews and raisins to the halwa.Switch off the stove.
- Now Healthy and Lip Smacking Papaya Halwa is ready !!!
- Serve the Papaya Halwa warm .
- Keep it in a Fridge and You can also serve the Papaya Halwa as a yummy cold dessert.
- You can adjust sugar according to your taste.
- If Papaya is fully ripe You need to add very little sugar.
- Add boiled milk only if you add cold milk it will curdle.
Chana sundal is a savory snack. It is traditional made for Ganesh chaturthi / Vinayaka chaturthi and Navaratris. Its Very simple and delicious snack. Its very healthy and guilt free !!!
Cooking time: 20 mins + Overnight chana soaking time
Serves: 4
Ingredients:-
Chana / Senagalu / Chick Peas - 1 cup
Coconut grated - 3 tbsp
Oil - 1 tsp
Mustard seeds -3/4 tsp
Urad dal -1 tsp
Dry Red chillies - 3
Asafoetida / hing -a pinch
Curry leaves -1 sprig
Salt - to taste
Method:-
Soak Chana Overnight or atleast 8 hours and pressure cook it with little bit salt and water just to immerse it for 4-5 whistles.

Stir fry for 2 minutes until moisture evaporates.
Then add required salt and grated or scarped coconut and fry for a minute. Switch off the flame.
Transfer to the serving bowl.
Notes:-
- You can add chopped onions after tempering. .
- Also you can replace red chillies with green chillies.
- Add little salt while cooking. This prevents over cooking of chana.
- If the soaking hour of chana is less, then adding salt will prevent chana from cooking properly.So at that time add salt after cooking chana.
- You can use the same method for cooking green gram,or chana dal sundal

During these nine nights , nine forms of Devi are worshiped .The tenth day is celebrated as Vijaydashmi or Dusshera.Therefore its a ten days festival.All the states have their own way of celebrating this festival .
The first three days of Navratri are dedicated to Goddess Durga( Godess of Power and Energy ) . Next three days are dedicated to Goddess Lakshmi (Goddess of Wealth and Prosperity).Last three are dedicated to Goddess Saraswati (Goddess Of Knowledge).
