Recipe Source -Nupur

Ragada Patties

Ingredients:-

For Patties:-
7-8 medium potatoes( boiled )
3 slices bread
salt to taste
oil for shallow frying

For Ragda:-
1 cup vatana / Peas
1 small onion ,finely chopped
1 tsp green chilli paste
1/2 tsp ginger-garlic paste
1/2 tsp turmeric
1 tsp red chilli powder
1/2 tsp cumin powder
1/2 tsp coriander powder
1 tbsp. jaggery
1 tbsp. tamarind paste
salt to taste
2 tbsp oil

For Garnish:-
Tamarind chutney
Finely chopped onion
Finely chopped coriander
fried sev
whipped yogurt

Method:-

1. Soak the peas overnight, then cook them in pressure cooker till they are fully cooked.
2. To make the ragda, heat oil and saute the onion for a few minutes till translucent. Add the ginger-garlic paste ,green chilli paste and saute for a minute . Add salt, turmeric, chilli powder, cumin powder, coriander powder and saute for a few seconds .Then add the cooked peas, 2 cups water, tamarind paste and jaggery. Bring to a boil and simmer for 5 minutes. Mash some of the peas to make the curry thicker if needed. Taste the curry and adjust the balance of sweet/sour/salty. Remove from heat and Keep ragda aside.
3. To make patties, cut the edges of the bread and then dip the bread slices in warm water, then squeeze out excess water and place in a bowl. Add boiled potatoes and salt, then knead everything together to mix well. Form patties . Then shallow fry the patties in a small amount of oil and drain on paper towels.
4. To assemble, place 2 patties on a plate. Top with a ladleful of Ragada. Then garnish with tamarind chutney, finely chooped onion, finely chopped coriander ,whipped yogurt and sev.
Enjoy a bowl of sizzling hot Ragda Patties!:))
