Panchmel Dal


This is the protein-packed Rajasthani Dal recipe. Panch =5 and mel =mix ,one of the most popular dal of Rajasthan is delicious and nutritious.Traditionally, 5 dals are used and hence the name -"Panch mel" dal The dal is thick and can be eaten with Chapati,Roti, Paratha or jeera rice. But to make it more protein rich I added green peas ,chick peas and also kidney beans (Rajma).
I first ate this dal in Hyderabad at Dhola-ri-Dhani (An Ethentic Rajasthani resort) where authentic Rajasthani cuisine is served.I liked the taste of this spicy dal. I got this recipie from Sanjeev Kapoors "Khana Khazana book".

(Serves 4 - 6)

Ingredients:-

1/4 cup Toor Dal
1/4 cup Moong Dal
1/4 cup Masoor Dal
1/4 cup Urad Dal
1/4 cup Chana Dal
1 tbsp split Green Peas
1 tbsp Chick Peas
1 tbsp rajma
A pinch of Asafoetida
1/2 tsp turmeric powder
1/2 tsp Pepper Powder
1/2 tsp garam masala
1 tsp coriander powder
1 tsp red chilly powder
2 tomatoes ,Chopped
2 green chillies
1/2 " inch ginger
2-3 garlic cloves
1 onion (finely chopped)
salt to taste
2 Whole red chillies
2 tbsp Ghee /Butter
1/2 tsp cumin seeds
1 cinnamon stick
3 cloves
2 tbsp coriander leaves, chopped




Method:-

1. Pressure cook dals,Green Peas,Chick Peas and Rajma with asafoetida and turmeric powder, adding 2 cups water for 3 whistles.
2. Let it open. Heat oil or butter in a pan over medium heat, add cumin , whole red chilies, cloves, and cinnamon, and let it splutter.
3. Now add onions and chilli- ginger- garlic paste and saute till it changes to light brown.
4. Add tomatoes and fry till oil comes out.
5. Add pepper powder,chilli powder, garam masala,coriander powder and salt.Cook for 5 minutes stirring it.
6. Garnish with Coriander.
7. Serve with chapati, roti, paratha or jeera rice.
