Katachi aamati


Katachi Amati is a special Soup made out of the water that remains after making Puran.(Puran is a stuffing for puran poli or bobattu made up of soaked cooked and ground Chana dal mixed with Jaggery or sugar).

Ingredients :-

2 cups stock removed from the boiled chana dal when used for Puran Poli (kat)
1/2 cup cooked channa dal
3 tbsp fresh coconut(grated)
2 cloves
1 small piece cinnamon
2 bay leaves
1 teaspoon tamarind pulp
2 teaspoon Maharashtrian goda masala(Black Masala)
5-6 curry leaves
3-4 green chillies(optional)
1 teaspoon turmeric powder
2 teaspoon red chili powder
1/4 teaspoon asafoetida
1 teaspoon cumin seeds
1 teaspoon mustard seeds
Small ball of jaggery
coriander leaves
salt to taste
oil
water



Method:-

1. Just as for Puran Poli, pressure cook chana dal with plenty of water. When it turns soft, remove from the cooker and use the water and cooked dal for making aamati.

2. Heat oil in pan .Add mustard seeds,Cumin seeds,cloves, cinnamon, and bay leaves.When they sizzle, add turmeric powder, asafoetida and curry leaves, chili powder,chopped green chillies,fresh coconut grated, jaggery. Fry for 2 seconds.

3.Add kat, cooked dal,tamarind pulp,salt,water as needed and bring to boil.

4.Add Goda masala(Black masala) and simmer for about 1/2 hour.

5.Now aamati is ready. Garnish with coriander leaves and grated fresh coconut and serve hot with puran poli.

Note:-Can be refrigerated in a closed container for a week.

  5. Puran Poli and Katachi Aamti. A combination made in heaven.

    But I make my Katachi Aamti with littles less spices. Next time will try with all these spices.
